Egg and Cheese Wrap with Spinach and Smashed Tomatoes

Ingredients:

Flour Tortilla

Cheddar cheese

Olive oil or butter

Fresh Spinach

Cherry tomatoes

1 egg

Milk

Cumin

Red Pepper Flakes

Italian Seasoning

Nutmeg

Black Pepper

Sriracha sauce 

Method:

Warm the flour tortilla in a pan. Remove it from the heat before it becomes hard. Place it on a plate. Slice cheddar cheese and place slices onto the flour tortilla. Fold over one edge of the tortilla. The heat from the tortilla will allow the cheese to melt. On medium high heat drizzle olive oil or butter into the pan. Place spinach into the pan and allow it to wilt. Once wilted, place the spinach on top of the cheese. If necessary, drizzle a small amount of olive oil into the pan; toss in the cherry tomatoes. Cover the pan. Cook the tomatoes on a high heat until they begin to pop and sizzle. Reduce the temperature. In a bowl begin mixing the egg, milk, cumin, red pepper flakes, Italian seasoning, nutmeg and black pepper. Put it aside. Once the tomatoes are soft, smash them with a fork, allowing them to cook in their juices for 2 minutes with the cover off on a high heat. Place the smashed tomatoes on top of the spinach. If necessary, drizzle a small amount of olive oil or butter into the pan; toss in the egg mixture. Cover the pan and cook the eggs on low. Once the eggs have set, flip one edge over. Cover the pan. Once the egg has cooked, place it on top of the tomatoes. Now, wrap all cooked ingredients tightly. Drizzle Sriracha sauce onto the wrap (or plate if you want to use it as a dip). Enjoy!
